Tomato Onion Meatball Soup



6 Servings of Tomato Onions Meatball Soup
106 Kcal per serving

250g organic grass-fed ground beef (90% lean)
1 organic egg with omega-3 fatty acids
3 tomatoes (400 g)
1 onion (200 g)
1 Tbsp tapioca flour
2 tsp sea salt
2 tsp peppercorns
6 cups water (1440 ml)


Grass-fed beef contains more omega-3 fatty acids and conjugated linoleic acid (CLA), both are heart-healthy fats.  Studies have shown that CLA in fact can promote reducing abdominal fats.  Reducing abdominal fat accumulation can decrease the risk of getting metabolic syndrome and type II diabetes.  Especially, beef has high amount of iron and vitamin B12, which can help us against iron-deficiency anemia.  Zero-glycemic-indexed beef is an excellent protein choice for people with diabetes.

Organic egg with omega-3 fatty acids is a good source of omega-3 fatty acids and lecithin.  Lecithin is the precursor of choline, that can be used to acetylcholine formation.  Acetylcholine is a very important neurotransmitter that is involved in memory health.

Tomatoes contain all four major carotenoids and lycopene, that provide health benefits in decreasing risk of getting certain cancer and eye disease.  Piperine-containing peppercorns increase beta-carotenes absorption.  Onions not only offer tangy sweet taste but also provide great health benefits.  Quercetin in onions can help reducing inflammation and healing infections.  Low-glycemic-indexed onions contain chromium that can assist regulating blood sugar, thus are great choice for diabetes.
