Vegetarian Cuisine: Morel Mushrooms Risotto





4 servings of Morel Mushrooms Risotto
265 Kcal per serving

1 cup dried morel mushroom (20g)
10 bella mushrooms (120g)
1 onion (150g)
2 scallions
1 Tbsp cold-pressed extra virgin olive oil
1 tsp salt
1 Tbsp Pepper
2 cups rice
2 cups water



This vegetarian dish is full of flavor with special nutty aroma from morel mushrooms.  In addition, bella mushrooms are rich in vitamin B2, D, selenium, and ergothioneine.  These vitamins, mineral, and antioxidants can help us fighting against free radicals and preventing chronic inflammation.  In addition, mushrooms are full of beta-glucan that can boost our immune function.  Onions not only offer tangy sweet taste but also provide great health benefits.  Quercerin in onions can help reducing inflammation and healing infections.  Low-glycemic-indexed onions have chromium that can assist regulating blood sugar, thus is a good choice for diabetes.     Cold-pressed extra virgin olive oil provides abundant mono-unsaturated fatty acids (MUFA) and vitamin E that have been proven to be good for our heart.  Green scallions contain thiosulfinates to protect us from microbial infection and prevent colon cancer.  This is truly delicious vegetarian crusine with great health benefit!
